For the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Premix (yields 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Directions

To prepare the Syrup: Place all the components in a pot, bring to a light boil, stirring until the sugar dissolves. Then, turn off the heat and leave to cool completely. Pour into a sterilised bottle, seal and store in the refrigerator, where it will keep for up to a month.

Preparing the Premix: Combine the specified liquids into one sizeable container, leave to sit for an hour, then strain best through cheesecloth, so it's perfectly clear.

When ready to serve: Add 85ml from the batch mix into a mixing glass filled with ice, gently stirring lightly for about 60 seconds to chill. Pour into an cold coupe glass or similar, top with a few cranberries and complete it by giving it a quick spritz of mandarin oil above the glass.
